Head Chef

Max

With over a decade of culinary experience in Abergavenny, Italian-born Max brings a passion for bold flavors and refined comfort to the heart of Fuzion. After moving to South Wales in 2014, Max honed his skills in local kitchens, developing a cooking style that blends Mediterranean traditions with seasonal Welsh produce.

Max’s love of food began in his family kitchen in Italy, where rustic recipes and vibrant ingredients inspired his journey as a chef. At Fuzion, his menus reflect that heritage—with a creative twist. From shareable small plates to hearty mains, every dish tells a story of craftsmanship, culture, and connection.

As both a chef and father, Max is committed to nurturing community, flavor, and the next generation—including his child who’s already showing signs of following in his culinary footsteps.

Second Chef

Lorella

Hailing from Italy’s Marche region, Lorella brings over a decade of culinary experience and a deep-rooted passion for traditional cooking to Fuzion. Since moving to Wales in 2014 with her husband and son, she has become known for her skill, warmth, and love of authentic food.

For Lorella, cooking is a way to connect and celebrate life. Her handmade pasta and use of fresh, seasonal ingredients reflect the food culture she grew up with. She’s worked alongside Head Chef Max Petrelli for years, sharing a bond built on shared heritage, creativity, and respect.

A proud career highlight was demonstrating pasta at the Abergavenny Food Festival with Franco Taruschio—another Marche native. At Fuzion, Lorella is excited to keep sharing her love of food with the vibrant Welsh community she now calls home.

Edyta

Edyta is the warm, welcoming face of Fuzion—and much more. Originally from Poland, she began her career in London’s fast-paced hospitality scene in the late 1990s before settling in Abergavenny with Max in 2014. Over the past decade, she’s become known for her natural charm, intuitive service, and deep care for every guest who walks through the door.

Beyond managing front-of-house, Edyta brings an artistic flair to the restaurant: her original paintings hang on Fuzion’s walls, setting the tone for a dining experience that is as visually inspiring as it is flavorful.

Whether she’s greeting guests, curating the dining room atmosphere, or supporting her family and team, Edyta’s presence is the heart of the restaurant. She’s proud to be building something meaningful—both for her family and for the community she calls home.
